Aging

64 months in rime in contact with the yeasts and subsequent transfer, and stirred to achieve hypermaceration of the yeasts.
Wine tasting

With good release of very fine bubbles, it is greenish with yellowish notes. On the nose it is very floral and fruity: notes of apple and peach and tropical fruits, pineapple and citrus with some notes of banana. On the palate it is very dry and fresh, creamy and full-bodied, with a certain acidity that gives it vivacity and freshness. The aging as a Reserva gives it wide and round, velvety sensations, with a silky and enveloping finish.

Store in the same position as when served, in a cool, dry place away from light. Serve at 4-7°C depending on the season and personal taste.

As a cava for aging, it can be enjoyed on any occasion. Imagine an appetizer of good salted ham, raw tuna or bonito with oysters, then grilled crayfish, moving on to seafood-filled ravioli, rare beef fillets and finishing with candied oranges or cinnamon ice cream. All perfectly paired with this Brut Nature Reserva. Or if not, with some good anchovy fillets, or a morning bread with tomato. And if not, alone, with good company.
